This is an easy, delicious and satisfying dense cookie recipe. You can add any type of nut or seed you prefer. You will get approximately 4 dozen medium cookies or 3 dozen large cookies. You can freeze the batter or freeze the cookie…if there’s any left over. These make a great treat to take along as fuel for a long walk, hike or bike ride. Kids will love them, too!
DRY INGREDIENTS:
2 cups (500 ml) whole wheat, buckwheat, kumat or spelt flour
1 cup (250ml) rolled oats
1 cup (250ml) nuts and seeds (pumpkin, walnut, sunflower, etc.)
OR 2 cups (500ml) trail mix
1 cup (250ml) raisins or currants
1/2 cup (125ml) dried fruit (mango, apricot, date, etc) – optional
1 cup (250ml) carob chips
1 tsp (5ml) cinnamon
1 tsp (5ml) pure vanilla extract
WET INGREDIENTS:
4 whole eggs
1 1/2 cups (375 ml) crushed pineapple with juice
1 cup (250ml) unpasteurized honey
1/2 cup (125ml) fresh squeezed orange juice (optional)
Suggestion: Try adding 2 or 3 scoops of vanilla or ch0colate protein powder to the dry ingredients.
Add the dry ingredients to a large mixing bowl. In a small bowl, add beaten eggs, pineapple with juice and honey. Mix well. Add wet ingredients to dry and blend. Add orange juice if needed for more liquid.
Spoon batter onto a greased cookie sheet. Bake for 20 to 25 minutes or until golden brown. Let cool and enjoy!
Sorry – I don’t have the nutritional values but go easy because they will put on pounds. Remember, don’t eat too many at one time as a treat is only meant to be eaten on rare occasions otherwise, it’s not a treat, it’s a staple.
Notes: These are healthy cookies! Use the most nutritious ingredients that you can find. If you can grind your own flour, all the better. Use fresh pineapple, organic eggs and real vanilla extract. Make sure the nuts and seeds are fresh, not rancid. Packaged is much better than bulk purchasing.
